Ink Gin is made in a hand-beaten copper pot where the botanicals are combined with 100% Australian grain sprit and water from the local caldera. All very cool; but what does it taste like?

Palate: Peppercorn and cardamom give it a spicy opening, with rounded notes of orange balancing it all out.An explorer and an author found a farm nestled between the sea, the rainforest and the mountains. It seemed perfect, for they had a vision to create different types of spirit - spirits of the land and close to nature. To make tea, steep 1 teabag in about 250ml hot water. let sit for about 10 mins for the flavours come through. Take out tea bag and let tea cool before using.⠀

This unique and award winning floral infused gin is pot distilled in small batches with 13 organic, native Australian & exotic botanicals are infused with butterfly pea flower petals. Normally used in herbal tea, these petals are pH sensitive, changing colour from their natural indigo to pink when mixed with tonic water, lemon or lime juice. The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour.

The final ingredient in Ink Sloe and Berry Gin is Australian rosella flowers. Growing wild on the fringes of tropical rainforest of northern Australia, rosellas are a type of hibiscus flower. Theyhave a vibrant colour and a crisp, tart flavour to balance the sweeter botanicals in Sloe & Berry.Ink Bitter Orange Gin started out as an idea to bring the sophistication of the bitter orange fruit into a spirit which was accessible, versatile and nostalgic. Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin.
