Versatility makes it easier for you with these cook-and-serve in one dishes that go from the oven to the table.

The pie pans, which were current in the 80's 90's and before, have become more difficult to find, and I was delighted to find these on Etsy. Our apple pie cooked well and released easily from the ridges, but it had quite a wet filling, so the pastry base was a bit soggy. Because metals conduct heat more efficiently than glass or ceramic, I anticipated this crust browning well on the bottom. This borosilicate glass dish is designed to withstand a thermal shock up to 220°C, meaning this glass dish can safely go directly from the freezer at a temperature of - 20°C, into the oven at a temperature of 200°C.We love baking cakes and breads in cast iron and the way the material's intense heat conduction yields wonderful crunchy edges and firm, golden crusts — so we were curious to see how that performance could translate to pie making. Deep-dish pans are great for two-crust savory pies, single-crust quiches, or pies that have two-layer fillings, like a lemon meringue or chocolate cream, when you want the first filling to leave some exposed crust to contain the topping. Some ceramic pans also come with appealing and smartly-designed flourishes, such as ruffled rims that help guide fingers when fluting crusts, or generous handles that make transferring from oven to table a cinch.

There’s a lip on the rim of the pan that could be a potential dirt trap, but otherwise cleaning was a doddle, especially as it can go in the dishwasher. The simple oval shape and slightly off-white colour give it a neutral appearance that will fit into most homes. You can even pop it in your freezer or fridge if there are leftovers to keep them ready to eat for lunch the next day. While Pyrex® glass is heat strengthened, through a thermal tempering process, to be durable and long-lasting, Pyrex® glassware-- any glass products, for that matter--can break if it’s dropped, knocked against a hard surface, or struck with a hard utensil—so handle your Pyrex® glassware with care.If you’ve got a large family, this 29cm stoneware pie dish is big enough for eight portions, ideal for big households or family gatherings. This dish is microwave, dishwasher and freezer safe and would work really well for crumbles, potato-topped pies and pasta bakes. Our deep apple pie cooked well in this dish – the pastry was crisp on the sides, but a little soggy on the bottom (we’d recommend using it for pies with drier fillings or without a pastry base). Adding liquid to hot glass may compromise the product’s strength, potentially resulting in breakage. Uneven heating, direct contact with heating elements, and sudden temperature changes (hot glassware coming in contact with something cool or wet, or cold glassware coming in contact with something very hot) can cause glass to shatter or break.
